Chitosan is a fining agent for use in clarifying wine. It has a positive charge and binds with negatively charged ions in solution, helping them to settle out of solution and leaving a clearer wine. Use Chitosan in conjunction with Kieselsol. Add to secondary for best results. Use 1 oz. per 5-6 gallons or 20 to 25 fl. oz. per 100 gallons of wine
