Citric acid is the primary acid found in citrus fruits. It can be used in sanitizing solutions to lower the pH, which will make the SO2 level more effective. Added to taste, it will provide the extra tartness missing in some wines. Recommended dose is to add to taste beginning with 1/2 tsp. per 5 gallons of wine. Use sparingly because a little goes a long way!
